This recipe scales really well because the ingredients have been calculated around a single pound of ground beef. If you need to increase the recipe, you add the additional items in whole increments (one more medium onion, one more bell pepper, etc.).
Be forewarned that this recipe has some zip to it, but that also somewhat helps with portion control. Not a bad trade-off, in my opinion.
I regularly utilize my Progressive Fruit & Vegetable chopper to make the dicing of the ingredients go faster. For a recent wrestling tournament I had to make 15 pounds of ground beef, so this recipe was multiplied by 15. The entire dicing of the 15 medium onions only took five minutes. The bell peppers took even less. Needless to say, I’m in love with this kitchen gadget. The fact that it cleans up in the dishwasher without having to try and clean the blades makes it even more useful.
