Slow Cooker Christmas Breakfast Casserole

This is a very festive looking breakfast casserole that is good for any day of the year. The red and green bell peppers give this a very Christmas-like look, so it’s very appropriate for Christmas morning too.

Be sure to thaw out your frozen hash browns prior to putting them in the slow cooker. We prefer shredded hash browns although cubed hash browns work just as well. We’re also a cheese crazy family in the Hectic Household, so the 4 cups of cheese is a bare minimum around here.

Another trick that I use is that I cook bulk breakfast sausage in water the night before I need to use it. Then I drain the water from the sausage and chill the sausage in the refrigerator overnight. This keeps all the ingredients that are going into the slow cooker at about the same temperature.
