Asparagus Rice
Ingredients
- 2 cups Instant Rice
- 2 cups Chicken Broth
- 1 bunch Asparagus
- 1 medium Onion
- 2 tablespoons Minced Garlic
- 1/2 cup Milk
- 1 cup Grated Parmesan Cheese
- 2 tablespoons Olive Oil
Instructions
- Cut the ends off the asparagus
- Cut the asparagus into pieces about 1 inch long
- Coarsely chop the onion
- In the large skillet, heat the olive oil over medium heat
- Add the onion and asparagus to the pre-heated skillet
- Cook for three minutes
- Add the rice and garlic to the skillet
- Cook for two minutes, stirring frequently
- Add the chicken broth to the skillet
- Reduce the heat to medium low
- Cook for fifteen minutes stirring occasionally
- Add the milk and parmesan cheese
- Stir until all ingredients are well mixed
- Serve
