Chicken Fajitas
Ingredients
- 1 large Red Bell Pepper
- 1 large Onion
- 4 large Boneless Skinless Chicken Breasts
- 8 ounces Sliced Mushrooms
- 2 cups Vegetable Oil
- 1 ounce Fajita Seasoning Mix
- 8 large Flour Tortillas
- Shredded Cheddar Cheese
- Sour Cream
Instructions
- Slice the green bell pepper into strips
- Slice the red bell pepper into strips
- Slice the onion into strips
- Slice the chicken into thin strips
- Place the chicken into the mixing bowl
- Pour 1/4 cup oil over the chicken
- Stir to cover the chicken in the oil
- Sprinkle the fajita seasoning evenly over the chicken
- Stir to combine the seasoning and the chicken
- Pour 2 tablespoons of oil into the skillet
- Preheat the skillet over medium-high heat
- Add the peppers, onion, and mushrooms to the skillet
- Cook the vegetables, stirring frequently for 5 minutes
- Remove the vegetables from the pan and set aside
- Add 2 tablespoons of oil to the skillet
- Add the chicken to the skillet
- Cook the chicken, stirring frequently for 10 minutes or until all redness is gone
- Add the vegetable to the chicken in the skillet
- Cook for an additional 2 minutes, stirring frequently
- Serve with tortillas, cheese, and sour cream
