Golden Mushroom Soup
Ingredients
- 1 pound Mushrooms
- 1/2 pound Portobello Mushrooms
- 2 tablespoon Paprika
- 1 tablespoon Dill Weed
- 2 tablespoons Garlic Powder
- 1 teaspoon Black Pepper
- 3 tablespoons Low-Sodium Soy Sauce
- 1 cup Water
- 3 tablespoon Extra Virgin Olive Oil
- 2 tablespoons All-Purpose Flour
- 2 cups Milk
Instructions
- Chop onion
- Slice mushrooms (_or purchase pre-sliced to save time_)
- In a large pot, heat 1 tablespoon olive oil on medium heat for two minutes
- Add chopped onions and cook for five minutes, stirring frequently
- Add the mushrooms, paprika, dill weed, garlic powder and black pepper
- Mix ingredients completely
- Cover and cook seven minutes, stirring frequently
- Add the soy sauce and water
- Cover and simmer for ten minutes
Soup Thickener:
- While the soup is simmering, mix the olive oil and flour in a separate pan
- Cook the mixture over medium heat for two minutes, stirring constantly
- Add milk
- Cook over medium heat for an additional two minutes, stirring frequently
- (don't let this mixture burn)
Finalizing the soup:
- Add the milk mixture to the mushroom mixture
- Stir until all ingredients are completely mixed
- Heat for three minutes over medium heat
