Some days I just don’t have all that much energy to make a meal. Of course, it’s pretty typical at the Hectic Household that those are the days when my family is famished. This Italian Roast Beef recipe creates a hearty entree that takes almost no work. Since it cooks in the slow-cooker, you can put it together and let it cook away without having to do much else.
We serve this on French Rolls if we have them, but pretty much any roll or hamburger bun will do if you want to eat this sandwich style. It’s also great with mashed potatoes, either the instant variety or homemade. Obviously, the instant variety fit better with my zero-energy-available situation today!
Hectic Italian Roast Beef
Ingredients
- 5 pounds Boneless Chuck Roast
- 12 ounces Pepperoncini pre-sliced is much easier to use
- 2 large Onions
- 4 tablespoons Minced Garlic
- 2 tablespoons Oregano
- 2 tablespoons Italian Seasoning
- 1 tablespoon Black Pepper
- 1 tablespoon Onion Powder
- 28 ounces Beef Broth
Instructions
- Reserve the liquid from the pepperoncini
- If the pepperoncini isn't sliced, thinly slice it
- Peel and slice the onion
- Place the chuck roast in the middle of the slow-cooker bowl
- Pour the pepperoncini over the roast
- Put the onion slices over the roast
- Sprinkle the minced garlic evenly over the roast
- Sprinkle the oregano, Italian seasoning, black pepper, and onion powder evenly over the roast
- Pour the reserved liquid from the pepperoncini over the roast
- Pour the beef broth over the roast
- Cook on low for 8 hours in your slow-cooker (_if you need this roast faster, cook on high for 4 hours instead, but note that it will be tougher_
- Just before serving, shred the meat using a two large forks or a large fork and stirring spoon
