School’s out for everybody…finally. In the olden days, back when we used clay tablets for our school work (ok, that might be exaggerating a little) school went from Labor Day (the first Monday in September) until Memorial Day (the last Monday in May). Nowadays, the kids go back much earlier, sometimes the first week of August. But the flip side is the college kids are out near the start of May. On the other hand, our high schooler didn’t get out until the middle of last week, well into the last quarter of the month.
But everybody is out of school and the track season has finally ended!
That means that Summer has started. Of course, I always think to myself, “Ah, Summer…a time when we won’t be so rushed”. Somehow I fool myself into thinking that every single year. Then we get to Memorial Day and I look ahead at the schedule and am overwhelmed. Fortunately, I’ve already planned my menu for the entire weekend, so at least that tiny little piece isn’t a burden.
We’ve got a picnic on Sunday. We’ll have a grill available, making cheeseburgers and hot dogs the entrees of the day. We’ll have a veggie tray with onion dip, fruit salad, and classic potato salad to round out the the meal. For dessert we’ll have brownies, chocolate chip pan cookies, and lemon bars. Yeah, we’re a bit heavy on desserts…but we’ve got fortify ourselves for the hectic Summer ahead!
I’ve got two breakfasts already planned, one with Yogurt Parfaits and Oatmeal, the other with a breakfast casserole. Sure, it’s a Christmas Breakfast Casserole, but it works just as well on the first weekend of Summer. I’m not sure what I’ll make the other morning. I’m sure it’ll be pretty traditional fare with eggs, bacon, sausage, and pancakes…unless the whining is sufficient that I make waffles or french toast!
We’re still negotiating what we’re going to have for each lunch and dinner throughout the weekend. We’ll start our meal plan with Friday’s lunch, so I’ve got a lot of meals to create. I know what I’m making, but I haven’t decided when I’m making each recipe. We’ll have a mix of sit-down as well as a couple come-and-go meals, so I’ve got to be prepared on both counts.

There you have it…the Hectic Manor menu for Memorial Day Weekend! I’m going to do my darnedest to enjoy myself and not spend all my time in the kitchen, but with my large crew that’s a tall task. I’ll mix up mimosas, tea, fruit punch, and assorted snacks to see if I can entice some of the family to join me in the kitchen.
No matter how it all works out and who’s with me, I’m going to make it a great day in the kitchen!
