This recipe started far away from the land of lonely mushrooms. In fact, it started on a site dedicated to Leeks! Who knew there was a site dedicated to leek recipes? I for one certainly did not. But fear not, http://www.leekrecipes.org/ has what you’re looking for if you have a thing for leeks. Or a load of them in your kitchen.
While I love leeks, I got ready to make my mushroom risotto and discovered that I didn’t have a purist recipe that wasn’t loaded with leeks. So I took the base recipe I had (Leek and Mushroom Risotto), cleansed it of it’s leek-hood, and played around with it quite a bit more. While I love the leek version, I think this one goes over better with my family. Apparently they’re prejudiced against leeks.
