Cowboy Beans
Ingredients
- 1 large Onion
- 1 large Green Bell Pepper
- 15 ounces Canned Kidney Beans
- 15 ounces Canned White Beans
- 15 ounces Canned Pinto Beans
- 15 ounces Diced Tomatoes with Jalapenos
- 1 pound Ground Beef
- 1/2 pound Bacon
- 1 tablespoon Minced Garlic
- 2 teaspoons Dried Chili Powder
- 1 cup Brown Sugar
- 1 cup Ketchup
- 1/2 cup Molasses
- 2 tablespoons Yellow Mustard
Instructions
- Coarsely chop the onion and bell pepper
- Drain the beans in a strainer, then drain the tomatoes and jalapeños
- Place two paper towels onto a large dinner plate
- Chop the bacon into bite-sized pieces
- Put the bacon into the pot on the cooktop and turn the heat to low
- Cook the bacon for 15 minutes, stirring often
- When the bacon is fully cooked, remove the pot from heat
- Transfer the bacon onto the paper-towel lined plate
- Add the ground beef to the pot and increase the temperature on the cooktop to medium
- Cook the meat, stirring often, until there is no pink left, about 8 minutes
- Drain the fat from the meat
- Reduce the temperature on the cooktop to low, then add the onions and bell pepper to the pot
- Cook, stirring often, for three minutes
- Add the bacon, garlic, chili powder, brown sugar, ketchup, molasses, and yellow mustard to the pot
- Stir until all the ingredients are combined and cook for three minutes
- Add the kindey beans, white beans, pinto beans, and tomatoes with jalapeños to the pot
- Cook, stirring often for 10 minutes
