Cream of Wild Rice Soup
Ingredients
- 1/2 cup Wild Rice
- 9 slices Bacon
- 1 medium Onion
- 4 cups Half-and-Half
- 20 ounces Cream of Potato Soup
- 16 ounces Velveeta Cheese
Instructions
- Cook the wild rice according to the package directions
- Cut up the bacon into small pieces
- Chop the onion
- Cube the velveeta into bite-sized piecs (about 1-inch on a side)
- In a small saucepan, cook the bacon on medium for 5 minutes, stirring frequently
- Add the onion to the pan
- Cook for another two minutes, stirring frequently
- Drain off the excess fat
- In a large pot combine the rice, bacon, onion, half-and-half, potato soup, and velveeta
- Cook over low heat until all ingredients are combined, stirring frequently
- Serve
