As a diabetic, it’s hard enough at Thanksgiving to try to keep the carbs down. There are just so many traditional foods that I like that aren’t all that great for me. This is a diabetic-friendly cranberry sauce made from scratch. As you can see, it’s super easy. It just takes a little patience.
Easy Fruit Salad
Ingredients
- 1 cup Splenda
- 1 cup No-Sugar Added Orange Juice
- 12 ounces Fresh cranberries
Instructions
- Over medium heat, dissolve the sugar in the orange juice
- Stir in the cranberries
- Cook for 10-15 minutes, stirring frequently
- As soon as several of the cranberries have popped remove the pan from the heat
- Transfer the cranberry sauce to a bowl
- Cover the bowl and allow the mixture to thicken
- If you prefer to eat this cooled, chill it in the refrigerator before serving
