Mexican Corn
Ingredients
- 1 medium Onion
- 4 ounces Cream Cheese
- 4 tablespoons Butter
- 16 ounces Frozen Corn
- 1 teaspoon Black Pepper
- 1 teaspoon Chili Powder
- 1/4 teaspoon Cumin
- 2 tablespoons Mayonnaise
- 2 tablespoons Lime Juice
- 2 tablespoons Dried Cilantro
Instructions
- Coarsely chop the onion
- Cut the cream cheese into small cubes
- Heat the butter in the skillet over medium heat until the butter is melted
- Add the corn, onion, pepper, chili powder, and coming
- Cook, stirring occasionally, for 10 minutes
- Remove the skillet from the heat
- Add the mayonnaise, lime juice, and cilantro to the skillet
- Stir until all ingredients are well mixed
- Add the cubed cream cheese
- Stir until the cream cheese is melted
- Serve
