No-Bake Energy Bites
Ingredients
- 1/3 cup Honey
- 2 teaspoons Vanilla Extract
- 2 cups Old-Fashioned Oats
- 1 cup Shredded Coconut
- 3/4 cup Mini Chocolate Chips
Instructions
- Put the peanut butter, honey, and vanilla into the large mixing bowl
- Stir the ingredients together until they are blended
- Add the oats, coconut, and chocolate ships to the bowl
- Stir the ingredients together until they are blended
- Put the mixing bowl in the refrigerator for at least an hour
- Prepare the storage containers you're going to use for the energy bits
- Remove the bowl from the refrigerator
- Use a spoon to extract enough of the mixture to make a golfball-sized ball
- Do your best to compress the ball (so they won't fall apart when you eat them)
- Put the ball into the storage container
- Repeat for the remainder of the mixture
- Put the storage container into the freezer
- Whenever you want a couple bites, retrieve them from the container in the freezer
