Roasted Garlic Potatoes
Ingredients
- Cooking Spray
- 1/2 cup Vegetable Oil
- 4 medium Potatoes
- 1/4 teaspoon Salt
- 1 tablespoon Dried Parsley
- 2 tablespoons Garlic Powder
Instructions
- Preheat the oven to 450F
- Spray the roasting pan with cooking spray
- Pour vegetable oil into roasting pan
- Put the roasting pan into the oven while it preheats
- Swirl the oil in the pan to coat then entire interior surface
- Wash the potatoes
- Cut the potatoes into 1 inch cubes
- Fill the large pot with water
- Bring the water to a boil over high heat
- Add the cubed potatoes to the boiling water
- Bring the water back to a boil
- Simmer for 5 minutes
- Drain the water from the potatoes
- Remove the heated pan from the preheated oven
- Pour the drained potatoes onto the heated pan in a single layer
- Toss the potatoes to coat them with the hot oil
- Sprinkle the garlic powder evenly over the potatoes
- Toss the potatoes again to distribute the garlic powder
- Return the pan to the oven
- Roast for 40 minutes, stirring the potatoes every 10 minutes
- Sprinkle with salt and pepper to taste
- Sprinkle the parsley evenly over the potatoes
- Serve
