Ginger-Lime Scallops
Ingredients
- 2 medium Carrots
- 2 ribs Celery
- 1 medium Red Onion
- 3 tablespoons Lime Juice
- 2 teaspoons Honey
- 1 tablespoon Grated Fresh Ginger
- 2 tablespoons Olive Oil
- 1 pound Large Scallops
Instructions
- Julienne carrots
- Julienne celery
- Chop onion
- In mixing bowl, combine lime juice, honey, and ginger
- Set aside
- Heat oil in skillet on medium-high heat
- Add carrots, celery, and onion to preheated skillet
- Cook 8 minutes, stirring often
- Remove mixture to a holding plate
- Cover holding plate with foil
- Add 1 tablespoon of olive oil to skillet
- Add scallops to skillet
- Cook over medium-high heat for 5 minutes, stirring often
- Add lime mixture
- Stir to loosen browned bits
- Serve over the vegetables
- Serve
