Scotch Breakfast Eggs
Ingredients
- 6 medium Eggs
- Cooking Spray
- 6 Pork Sausage Patties
Instructions
- Preheat oven to 350°F
- Put eggs in saucepan large enough to hold them in single layer
- Add cold water to cover eggs by 1 inch
- Heat over high heat just to boiling
- Remove from burner
- Cover pan
- Let eggs stand in hot water for 12 minutes
- Drain immediately
- Cool eggs completely under cold running water
- Remove shells from the hardboiled eggs
- Spray casserole dish with cooking spray
- Place eggs into the casserole dish
- Press sausage patties over eggs
- Bake 20 minutes in preheated oven or until the sausage patties are brown and well-cooked
- Serve
