Simple Stuffed Zucchini
Ingredients
- 2 medium Zucchini
- 6 ounces Spaghetti Sauce
- 1 tablespoon Garlic Powder
- 1 tablespoon Onion Powder
- 2 tablespoons Breadcrumbs
- 1 ounce Grated Parmesan Cheese
- 4 ounces Shredded Mozzarella Cheese
- Cooking Spray
Instructions
- Preheat the oven to 375F
- Cut each zucchini in half lengthwise
- Using a melon baller (or spoon) hollow out the zucchini leaving about 1/4”-inch of flesh and skin
- Save the scooped out flesh in a medium mixing bowl
- Chop the scooped out flesh into small pieces
- Add the spaghetti sauce, garlic powder, onion powder, bread crumbs, and parmesan cheese
- Stir until all ingredients are well mixed
- Put mixture into hollowed out zucchini
- Sprinkle with mozzarella cheese
- Spray the baking sheet with cooking spray
- Put stuffed zucchini onto the baking sheet
- Bake for 40 minutes
- Serve
