South of the Border Fish
Ingredients
- 1 cup Frozen Corn
- 1 medium Onion
- 15 ounces Black Beans canned
- 1 medium Tomato
- Cooking Spray
- 2 pounds Tilapia Filets
- 2 tablespoons Lime Juice
- 1 teaspoon Minced Garlic
- 4 ounces Chopped Green Chilis canned or frozen
- 1 teaspoon Ground Cumin
- 2 teaspoons Chili Powder
- 3 tablespoons Fresh Cilantro
Instructions
- Preheat oven to 350°F
- Thaw corn
- Chop onion
- Drain green chilis
- Rinse and drain black beans
- Chop Tomato
- Spray casserole dish with cooking spray
- Lay tilapia filets in the casserole dish
- Drizzle filets with lime juice
- Preheat skillet over medium heat
- Saute garlic and onion over medium heat in preheated skillet
- Add green chilis, cumin, chili powder, black beans, corn and tomatoes
- Stir frequently while sauteing for 5 minutes
- Add cilantro
- Spoon sauce over the fish
- Cover casserole dish with foil
- Bake for 30 minutes in preheated oven
- Serve
