Any recipe that takes very long to produce tends to get made once, maybe twice, and then usually falls into the pile with the dust bunnies, never to see the light of day again.
We eat a lot of chicken at the Hectic Household, and after a while all the common and easy methods of chicken preparation get kind of old. So, over the past few weeks, we’ve been talking about simplifying some tasty ideas so that they make it into our regular rotation.
One of my daughters saw a box of prepared chicken breasts in the freezer case at the store, and this got us to thinking about making a stuffed cheese and chicken meal. Cheese is probably the only food more common in the Hectic Kitchen than chicken, so it was somewhat of an obvious idea.
This recipe is the result of thought process. Use this trick to pound the chicken breasts to reduce mess and fuss.
