My wife has been on a mushroom kick lately. Last week she requested stuffed mushrooms. I did my best with our Zippy Stuffed Mushrooms, but lost points because she doesn’t like that much cream cheese in her stuffed mushrooms. I’m still working on a replacement. Despite just having mushrooms, when I asked for menu suggestions for the week from the family, three of them asked for mushrooms. Oddly, they didn’t really care how the mushrooms were prepared, they just wanted mushrooms. Unfortunately, two of them hate mushrooms, so we’re going to augment the meal with boxed macaroni and cheese. Sometimes it’s hard to please everybody and make everything from scratch!
We’re going to start the meal off with Golden Mushroom Soup. I’ve had this out of a can lots and lots of times, and had it at a restaurant once. In every case, it was too salty for me. So I’ve tried to develop a lower sodium soup that’s not a killer to make.
Next we’re going to pair Citrus Marinated Steak Strips with Mushroom Risotto. The Steak Strips are going to be prepared with portabello mushrooms to stick with the theme.
To help appease the non-mushroom eaters, we’re going to complement everything with an Easy Fruit Salad…the same one we had on Thanksgiving.
