There are some recipes that are passed down that make you smile a little bit. Some make you smile because of how they taste, some because of the memories they rekindle, and some just because of the names. This recipe falls into the latter category. While my Mom always called this Turkey Rabbit, I believe the correct spelling is Turkey Rarebit.
In either case, this is a creative use of leftover turkey (or chicken). You can serve this over English Muffins, toasted bread, bagels , or even croutons. My personal favorite are lightly toasted English Muffins.
