It’s been a long time coming, but we’re back and ready to take on new challenges in 2016. We’ve been working extremely hard behind the scenes at Hectic-Kitchen to update the website. Our goal is to provide you with practical recipes that you can make in the real world. We’re working hard to give you information that you can use today in your own house. Stuff you can do while the kids are scrambling around your feet, the dog is scratching at the backdoor, and the phone is ringing.
You see, we’re living the same Hectic Life you are. I’m the founder of Hectic-Kitchen. My name is Jeff and I’m the father of eight kids, ranging in age from 26 to 13. I’ve got six daughters and two sons. All my kids have been active in sports, school, and all sorts of other extra-curricular activities. We try to eat together as a family as much as possible, but the reality of our lives is that it doesn’t happen as much as we’d like. That means that I’ve had to devise ways to have breakfasts ready to go out the door over a two-hour timespan, and dinner often has to be kept warm during a different two-hour span at night.
Because the kids have been so active, we eat a lot of food. People say that boys eat a lot. That’s true, but active kids (whether boys or girls) eat way more than inactive kids. We don’t have any inactive kids, so I’ve had to learn to cook in large quantities. And I’ve had to learn to do that on a budget. And the food has to be healthy…because junk just doesn’t provide the fuel they need.
Now our first grandson is also living with us. That’s reopened the door to toddler nutrition. It’s caused me to rethink the foods that we’ve always eaten. He’s not picky, but he’s a toddler. He eats what he likes, when he likes. I’m also his full-time childcare provider, so I’ve fed him loads of meals over his two years. It’s funny, but when you have grandkids you actually start doing things right, the way you wish you had the first time around.
All this means boils down to one thing. I’m no expert in any academic sense. Sure I’ve read up on nutrition, studied about health, and done everything I can to learn about cooking properly. But most of my knowledge comes from making meals and then getting feedback from my family and friends.
So, this is the beginning of a journey. A journey that I’d like to share with you. I hope you’re ready to learn along with me!
