Golden Mushroom Soup

Ingredients

  • 1 pound Mushrooms
  • 1/2 pound Portobello Mushrooms
  • 2 tablespoon Paprika
  • 1 tablespoon Dill Weed
  • 2 tablespoons Garlic Powder
  • 1 teaspoon Black Pepper
  • 3 tablespoons Low-Sodium Soy Sauce
  • 1 cup Water
  • 3 tablespoon Extra Virgin Olive Oil
  • 2 tablespoons All-Purpose Flour
  • 2 cups Milk

Instructions

  • Chop onion
  • Slice mushrooms (_or purchase pre-sliced to save time_)
  • In a large pot, heat 1 tablespoon olive oil on medium heat for two minutes
  • Add chopped onions and cook for five minutes, stirring frequently
  • Add the mushrooms, paprika, dill weed, garlic powder and black pepper
  • Mix ingredients completely
  • Cover and cook seven minutes, stirring frequently
  • Add the soy sauce and water
  • Cover and simmer for ten minutes

Soup Thickener:

  • While the soup is simmering, mix the olive oil and flour in a separate pan
  • Cook the mixture over medium heat for two minutes, stirring constantly
  • Add milk
  • Cook over medium heat for an additional two minutes, stirring frequently
  • (don't let this mixture burn)

Finalizing the soup:

  • Add the milk mixture to the mushroom mixture
  • Stir until all ingredients are completely mixed
  • Heat for three minutes over medium heat
