No-Bake Energy Bites

Ingredients

  • 1/3 cup Honey
  • 2 teaspoons Vanilla Extract
  • 2 cups Old-Fashioned Oats
  • 1 cup Shredded Coconut
  • 3/4 cup Mini Chocolate Chips

Instructions

  • Put the peanut butter, honey, and vanilla into the large mixing bowl
  • Stir the ingredients together until they are blended
  • Add the oats, coconut, and chocolate ships to the bowl
  • Stir the ingredients together until they are blended
  • Put the mixing bowl in the refrigerator for at least an hour
  • Prepare the storage containers you're going to use for the energy bits
  • Remove the bowl from the refrigerator
  • Use a spoon to extract enough of the mixture to make a golfball-sized ball
  • Do your best to compress the ball (so they won't fall apart when you eat them)
  • Put the ball into the storage container
  • Repeat for the remainder of the mixture
  • Put the storage container into the freezer
  • Whenever you want a couple bites, retrieve them from the container in the freezer
