Chicken Fajitas

Ingredients

  • 1 large Red Bell Pepper
  • 1 large Onion
  • 4 large Boneless Skinless Chicken Breasts
  • 8 ounces Sliced Mushrooms
  • 2 cups Vegetable Oil
  • 1 ounce Fajita Seasoning Mix
  • 8 large Flour Tortillas
  • Shredded Cheddar Cheese
  • Sour Cream

Instructions

  • Slice the green bell pepper into strips
  • Slice the red bell pepper into strips
  • Slice the onion into strips
  • Slice the chicken into thin strips
  • Place the chicken into the mixing bowl
  • Pour 1/4 cup oil over the chicken
  • Stir to cover the chicken in the oil
  • Sprinkle the fajita seasoning evenly over the chicken
  • Stir to combine the seasoning and the chicken
  • Pour 2 tablespoons of oil into the skillet
  • Preheat the skillet over medium-high heat
  • Add the peppers, onion, and mushrooms to the skillet
  • Cook the vegetables, stirring frequently for 5 minutes
  • Remove the vegetables from the pan and set aside
  • Add 2 tablespoons of oil to the skillet
  • Add the chicken to the skillet
  • Cook the chicken, stirring frequently for 10 minutes or until all redness is gone
  • Add the vegetable to the chicken in the skillet
  • Cook for an additional 2 minutes, stirring frequently
  • Serve with tortillas, cheese, and sour cream
