Zucchini Fritters

Ingredients

  • 3 large Zucchini
  • 1/2 cup All Purpose Flour
  • 1 teaspoon Black Pepper
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Onion Powder
  • 1/4 cup Grated Parmesan Cheese
  • 2 large Eggs
  • 1 teaspoon Salt
  • 1/4 cup Vegetable Oil

Instructions

  • Coarsely grate the zucchini
  • Add the flour, pepper, garlic powder, onion powder, and parmesan cheese to the large mixing bowl
  • Stir until all ingredients are combined
  • Beat the eggs in the small mixing bowl
  • Add the zucchini and eggs to the large mixing bowl
  • Mix until no dry lumps remain
  • Heal the oil in the large skillet over medium-high heat for 5 minutes
  • Drop one tablespoon of batter into the oil and flatten with a pancake turner creating a fritter
  • Repeat for several more fritters but DO NOT overfill the skillet
  • Cook for two minutes
  • Flip the fritters over
  • Cook for 2 minutes on the other side
  • Remove to a paper-towel covered plate to drain the oil
  • Repeat the frying for the remaining batter
  • Serve
