Coarsely grate the zucchini
Add the flour, pepper, garlic powder, onion powder, and parmesan cheese to the large mixing bowl
Stir until all ingredients are combined
Beat the eggs in the small mixing bowl
Add the zucchini and eggs to the large mixing bowl
Mix until no dry lumps remain
Heal the oil in the large skillet over medium-high heat for 5 minutes
Drop one tablespoon of batter into the oil and flatten with a pancake turner creating a fritter
Repeat for several more fritters but DO NOT overfill the skillet
Cook for two minutes
Flip the fritters over
Cook for 2 minutes on the other side
Remove to a paper-towel covered plate to drain the oil
Repeat the frying for the remaining batter
Serve
