Asparagus Rice

Ingredients

  • 2 cups Instant Rice
  • 2 cups Chicken Broth
  • 1 bunch Asparagus
  • 1 medium Onion
  • 2 tablespoons Minced Garlic
  • 1/2 cup Milk
  • 1 cup Grated Parmesan Cheese
  • 2 tablespoons Olive Oil

Instructions

  • Cut the ends off the asparagus
  • Cut the asparagus into pieces about 1 inch long
  • Coarsely chop the onion
  • In the large skillet, heat the olive oil over medium heat
  • Add the onion and asparagus to the pre-heated skillet
  • Cook for three minutes
  • Add the rice and garlic to the skillet
  • Cook for two minutes, stirring frequently
  • Add the chicken broth to the skillet
  • Reduce the heat to medium low
  • Cook for fifteen minutes stirring occasionally
  • Add the milk and parmesan cheese
  • Stir until all ingredients are well mixed
  • Serve
