Ginger-Lime Scallops

Ingredients

  • 2 medium Carrots
  • 2 ribs Celery
  • 1 med Red Onion
  • 3 tablespoons Lime Juice
  • 2 teaspoons Honey
  • 1 tablespoon Grated Fresh Ginger
  • 2 tablespoons Olive Oil
  • 1 pound Large Scallops

Instructions

  • Julienne carrots
  • Julienne celery
  • Chop onion
  • In mixing bowl, combine lime juice, honey, and ginger
  • Set aside
  • Heat oil in skillet on medium-high heat
  • Add carrots, celery, and onion to preheated skillet
  • Cook 8 minutes, stirring often
  • Remove mixture to a holding plate
  • Cover holding plate with foil
  • Add 1 tablespoon of olive oil to skillet
  • Add scallops to skillet
  • Cook over medium-high heat for 5 minutes, stirring often
  • Add lime mixture
  • Stir to loosen browned bits
  • Serve over the vegetables
  • Serve
