Julienne carrots
Julienne celery
Chop onion
In mixing bowl, combine lime juice, honey, and ginger
Set aside
Heat oil in skillet on medium-high heat
Add carrots, celery, and onion to preheated skillet
Cook 8 minutes, stirring often
Remove mixture to a holding plate
Cover holding plate with foil
Add 1 tablespoon of olive oil to skillet
Add scallops to skillet
Cook over medium-high heat for 5 minutes, stirring often
Add lime mixture
Stir to loosen browned bits
Serve over the vegetables
Serve
