Mexican Corn

Ingredients

  • 1 medium Onion
  • 4 ounces Cream Cheese
  • 4 tablespoons Butter
  • 16 ounces Frozen Corn
  • 1 teaspoon Black Pepper
  • 1 teaspoon Chili Powder
  • 1/4 teaspoon Cumin
  • 2 tablespoons Mayonnaise
  • 2 tablespoons Lime Juice
  • 2 tablespoons Dried Cilantro

Instructions

  • Coarsely chop the onion
  • Cut the cream cheese into small cubes
  • Heat the butter in the skillet over medium heat until the butter is melted
  • Add the corn, onion, pepper, chili powder, and coming
  • Cook, stirring occasionally, for 10 minutes
  • Remove the skillet from the heat
  • Add the mayonnaise, lime juice, and cilantro to the skillet
  • Stir until all ingredients are well mixed
  • Add the cubed cream cheese
  • Stir until the cream cheese is melted
  • Serve
