Cream of Wild Rice Soup

Ingredients

  • 1/2 cup Wild Rice
  • 9 slices Bacon
  • 1 medium Onion
  • 4 cups Half-and-Half
  • 20 ounces Cream of Potato Soup
  • 16 ounces Velveeta Cheese

Instructions

  • Cook the wild rice according to the package directions
  • Cut up the bacon into small pieces
  • Chop the onion
  • Cube the velveeta into bite-sized piecs (about 1-inch on a side)
  • In a small saucepan, cook the bacon on medium for 5 minutes, stirring frequently
  • Add the onion to the pan
  • Cook for another two minutes, stirring frequently
  • Drain off the excess fat
  • In a large pot combine the rice, bacon, onion, half-and-half, potato soup, and velveeta
  • Cook over low heat until all ingredients are combined, stirring frequently
  • Serve
