Simple Stuffed Zucchini

Ingredients

  • 2 medium Zucchini
  • 6 ounces Spaghetti Sauce
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Onion Powder
  • 2 tablespoons Breadcrumbs
  • 1 ounce Grated Parmesan Cheese
  • 4 ounces Shredded Mozzarella Cheese
  • Cooking Spray

Instructions

  • Preheat the oven to 375F
  • Cut each zucchini in half lengthwise
  • Using a melon baller (or spoon) hollow out the zucchini leaving about 1/4”-inch of flesh and skin
  • Save the scooped out flesh in a medium mixing bowl
  • Chop the scooped out flesh into small pieces
  • Add the spaghetti sauce, garlic powder, onion powder, bread crumbs, and parmesan cheese
  • Stir until all ingredients are well mixed
  • Put mixture into hollowed out zucchini
  • Sprinkle with mozzarella cheese
  • Spray the baking sheet with cooking spray
  • Put stuffed zucchini onto the baking sheet
  • Bake for 40 minutes
  • Serve
