South of the Border Fish

Ingredients

  • 1 cup Frozen Corn
  • 1 medium Onion
  • 15 ounces Black Beans canned
  • 1 medium Tomato
  • Cooking Spray
  • 2 pounds Tilapia Filets
  • 2 tablespoons Lime Juice
  • 1 teaspoon Minced Garlic
  • 4 ounces Chopped Green Chilis canned or frozen
  • 1 teaspoon Ground Cumin
  • 2 teaspoons Chili Powder
  • 3 tablespoons Fresh Cilantro

Instructions

  • Preheat oven to 350°F
  • Thaw corn
  • Chop onion
  • Drain green chilis
  • Rinse and drain black beans
  • Chop Tomato
  • Spray casserole dish with cooking spray
  • Lay tilapia filets in the casserole dish
  • Drizzle filets with lime juice
  • Preheat skillet over medium heat
  • Saute garlic and onion over medium heat in preheated skillet
  • Add green chilis, cumin, chili powder, black beans, corn and tomatoes
  • Stir frequently while sauteing for 5 minutes
  • Add cilantro
  • Spoon sauce over the fish
  • Cover casserole dish with foil
  • Bake for 30 minutes in preheated oven
  • Serve
