I’m kind of an OCD cook. While I’m a stickler for getting measurements right, sometimes you have to go with your gut and add a bit of something here, subtract a bit there. More importantly, when I discover that I’m out of an ingredient, I’ll often just substitute something else. Some of my substitutions have been rather odd, but the results have often turned out great. Not always, but often enough that I’m motivated to just give it a shot.
I also hate having to measure and ingredient in multiple utensils. I hate cleanup, and the extra spoons, measuring cups, etc. have to be cleaned…and I hate that. So if a recipe is like the one from Allrecipes where this one originated, it’s going to get modified by me. The parmesan cheese amount of 1/3 cup + 1 tablespoon + 1 teaspoon was just too much for me. That became half a cup.
