Zucchini Fritters
Ingredients
- 3 large Zucchini
- 1/2 cup All Purpose Flour
- 1 teaspoon Black Pepper
- 1 tablespoon Garlic Powder
- 1 tablespoon Onion Powder
- 1/4 cup Grated Parmesan Cheese
- 2 large Eggs
- 1 teaspoon Salt
- 1/4 cup Vegetable Oil
Instructions
- Coarsely grate the zucchini
- Add the flour, pepper, garlic powder, onion powder, and parmesan cheese to the large mixing bowl
- Stir until all ingredients are combined
- Beat the eggs in the small mixing bowl
- Add the zucchini and eggs to the large mixing bowl
- Mix until no dry lumps remain
- Heal the oil in the large skillet over medium-high heat for 5 minutes
- Drop one tablespoon of batter into the oil and flatten with a pancake turner creating a fritter
- Repeat for several more fritters but DO NOT overfill the skillet
- Cook for two minutes
- Flip the fritters over
- Cook for 2 minutes on the other side
- Remove to a paper-towel covered plate to drain the oil
- Repeat the frying for the remaining batter
- Serve
